Stuffed Meat Loaf
Serves 6 - 8
2 lbs ground beef (1 lb beef + 1 lb chicken), 3 slices bread, 2 raw eggs, 1 yellow onion, fine chopped, 4 hard-boiled eggs, shelled and cut into 4 pieces across, 2 large cloves of garlic, smashed and minced, salt and pepper.
Soak the bread in the water for 5 minutes. Squeeze the bread to remove excess water and crumble into a large bowl. Add the beef to the bread along with onions, raw eggs, salt pepper, and garlic. Set the meat loaf mixture aside.
Preheat the oven to 375F. Line a baking sheet with aluminum foil. Spread the meat loaf mixture out on a large piece of waxed paper into 12x10-inch rectangle. Spread the hard-boiled eggs along the long side, leaving a 1-inch border. Roll up like a jelly roll, starting on one long side. Peel back the waxed paper as you roll.
Place the roll, seam side down, on the prepared baking sheet. Bake 1 hour. Cut into thick slices and serve at one.
