Banana latkes



Banana latkes

2 ripe bananas, mashed, 3/4 cup milk, 2 eggs, 2 cups all-purpose flour, 1 tsp baking powder, 1 tbsp sugar, 1/4 teaspoon salt, 1 1/2 tbsp small chocolate chunks (optional)
Combine flour, sugar, baking powder and salt. In a separate bowl, mix together eggs, milk, and bananas. Stir flour mixture into banana mixture; batter will be slightly lumpy. Mix well and add chocolate chunks.


Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve warm.
