I got this recipe from my aunt many years ago. Simply speaking, I like and make over and over again. I hope you will enjoy them as much as I do.
Sour-cream apple bars.
Dough:
4 large eggs
1 cup sugar
1 teaspoon vanilla extract
13-14 oz (400 gram) sour cream
1/2 teaspoon soda
1/2 cup margarine, melted, room temperature
15 tablespoons all-purpose flour
Filling
4 large size apples, peeled, cored, chopped into medium-sized chunks
4 tablespoons sugar
2 tablespoon bread crumbs
Preheat oven to 350 degrees. Line the bottom of a 9x13x2-inch pan with parchment paper. Butter the paper and the sides of the pan. Mix apples with sugar and bread crumbs
Meanwhile, in a large bowl, using an electric mixer or whisk, beat eggs with sugar until thick and ribbons form on the surface of the beaten eggs. Beat in vanilla. Add sour and melted margarine.
In another bowl, mix flour and soda.Stir in flour mixture with a spoon until just combined. The batter will be smooth and enough thick for baking.
Pour half of the batter into pan. Pile and spread evenly the cut apples directly on the prepared batter. Pour another half over the apples. Bake in the preheated oven for 40-45 minutes, or until a tested comes out free of batter. Cool in pan for 10 minutes, then but into bars. Dust lightly with powdered sugar (optional).
