Apple Corn Slaw



Apple Corn Slaw


Makes 4-6 big portions


1/2 large head green cabbage, very finely chopped
1 large apple, cored and grated
1 teaspoon lemon juice
1 medium size carrot, peeled and grated
1 cup canned corn, drained
1/4 cup cilantro and dill
3 table spoons mayonnaise
salt and fresh ground black pepper to taste


Cut cabbage into very thin slices (less than 1/4 inch thick) . In a large pot combine cabbage with a little bit of salt and massage the cabbage with your hands until it slightly softens and is reduced in size. In large plastic or glass bowl gently combine apple and lemon juice. Add cabbage, carrot, corn, and cilantro/dill. Mix with mayonnaise  Add salt and pepper by taste Serve immediately.
